I love the process of developing a recipe. Whether at my home or at Le Bernardin, my restaurant in New York, the testing and tasting—the cooking process—is where flavors really develop. Making wine is the same and I have been fortunate to observe the process a few times when I have visited wineries. I have a deep respect for the work that goes into a bottle of wine. Because the work of winemaking and the work of cooking are all about developing flavors, it makes sense that pairing wine and food together is fun but also a little bit difficult—part instinct and part science. This week, my sous chefs and I challenged the Sommelier at Le Bernardin, Aldo Sohm, to pair a wine with one of our new recipes. Aldo pairs wine with food for our customers every day, many times a day, but this recipe was a particular challenge because it had lots of spices and exotic flavors in it. Later in the show, you will travel with me to Sonoma, California to visit Iron Horse Vineyards. There we will experience the steps it takes to make sparkling wine and also taste their products with some food pairings that really surprised me. Finally, in my home kitchen, I will accept a challenge from Aldo as he brings me some wine to taste and then make a recipe according to what I think would go well with the wine. It was a fun exercise and we came up with some easy recipes and wine pairings that you can try at home.
