At Le Bernardin, Vincent Robinson works as our saucier. He gets to the restaurant very early in the morning and cooks all of the sauces that go with each dish we serve. Each sauce is complex and has to be fine tuned over a few hours.When he is finished, all of the chefs taste them with Vincent to make sure they are exactly right. Vincent is passionate about his job and he has a very sophisticated palate--his work at the restaurant is so important.
