Green Papaya Salad

Serves 4



Combine all of the ingredients in a large mixing bowl, season to taste with salt and pepper and toss to evenly coat.

Let the salad marinate for 10 minutes in the refrigerator before serving.

1 large green papaya, peeled,
   seeded and julienned
1 small carrot, peeled and
2 scallions, thinly sliced
1 jalapeno, halved, seeded and
   thinly sliced
¼ cup mint leaves, julienned
¼ cup cilantro leaves, julienned
¼ cup lime juice
2 tablespoons rice wine vinegar
2 teaspoon minced ginger
2 teaspoons sugar
1 teaspoon mirin or ½ teaspoon
- fine sea salt and freshly
   ground black pepper
