RECIPE: Romaine "Caesar" Gratin from The Martha Stewart Show
serves 6-8

2 yolks
4 fillets anchovy, diced
1 clove garlic, sliced
¼ cup lemon juice
1 tablespoon Dijon mustard
1 tablespoon cracked pepper
½ cup extra virgin olive oil
2 heads romaine lettuce heart, quartered lengthwise and trimmed
½ cup freshly grated parmesan cheese
fine sea salt and freshly ground black pepper
1. Combine together the yolks, anchovy, garlic, lemon juice, mustard and cracked pepper in a blender. Using the medium speed, slowly drizzle in the olive oil until fully incorporated. Season to taste with salt.
Preheat the oven on broil.

2. Lay out the romaine lettuce on a tray and brush with the Caesar dressing. Sprinkle the parmesan on top. Broil the romaine for about 3 minutes or just until the cheese melts and gets golden brown.
